Weddings are full of traditions. A white dress, the bouquet toss, decorating the getaway car.
Did you know that a long time ago, they would hide a glass ring somewhere in the wedding cake? The maiden that found the glass ring would be the next to marry. This was sort of the precursor to the bouquet toss.
My question is- what happens if a guy or a married woman finds the ring? Not quite as effective as the bouquet toss for targeting the young maiden population. ;)
But who came up with the crazy idea to save the top of your wedding cake to eat on your anniversary?
Historically, a newly married couple started having children within the first year of their marriage. They actually saved the top tier of the cake to serve at the christening celebration of their firstborn.
Since many couples don’t have kids right away, the tradition has changed to what we know today – eating the cake on your first anniversary to bring back memories of your wedding and the excitement it brought.
Now the big question: how do you keep cake for a year tasting yummy enough to bring back the good memories?
Here are some simple steps to follow!
1. Remove any decorations that won’t allow you to wrap the cake tightly.
2. Wrap the bottom cardboard layer in foil. A plastic bottom works fine instead.
3. Stick the cake in the freezer for 30-60 minutes. This freezes the frosting so it won’t stick to the wrapping!
4. Wrap the cake several times in plastic wrap. Don’t skimp. This is a time to be generous.
5. Wrap the plastic-covered cake in 2 or 3 layers of foil. Don’t use foil beneath the plastic wrap. They say it makes it taste freezer burnt.
6. It’s even better to place the cake in a plastic storage container. Use an airtight bag (think Ziplock) at the very least.
7. Store it in the deepest, darkest corner of your freezer. This keeps it as far away from the opening/closing action as possible. It works much better to keep it in a deep freezer. The ones on the side of your refrigerator usually have a defrost cycle. This causes that freezer burn taste.
So what do I do when my first anniversary rolls around?
Take the cake out of your freezer about a day or two ahead before your anniversary. Let it thaw in the fridge. Bring it to room temperature just before eating.
There is a new tradition that is becoming popular. You hired a fabulous cake artist to make your wedding cake. Consider ordering a duplicate of your wedding cake top tier to be picked up on your first anniversary. Your cake will then be just as delicious and fresh as the one you enjoyed on your wedding day!
